Bison/Buffalo tastes like beef wishes it could… Not only does the meat from the bison taste superior to other meats, it’s also a highly nutrient dense food because of the proportion of protein, fat, mineral, and the fatty acids in its caloric value. Comparisons of other meat sources have shown that bison has a greater concentration of iron as well as some of the essential fatty acids necessary for human well being. Great for diets and if you are on a medical restriction from red meat. Buffalo meat has up to 30% more protein, 50% less cholesterol and 70% less fat than beef. Bison/buffalo has 143 calories per 100 grams of cooked meat compared to 211 calories for beef, 212 calories for pork and 190 calories for skinless chicken. (from the USDA Nutrient Data Laboratory). Ounce for ounce, bison/buffalo has only about ¼ of the fat that beef has and is more unsaturated than beef. It also is higher in iron.
